Artisan bread is a noble and outstanding product. The ingredients are simple – flour, water and salt. But the alchemy behind putting those ingredients together into bread is a complicated succession of mixing, kneading, resting, shaping and baking. This is the kind of magic we perform at Charcuterie Totoche. We turn a few simple ingredients into an outstanding baguette, croissant or multigrain loaf.
Nothing is tastier and more satisfying than a thick slice of our well baked brownish loaf of bread spread with farm fresh butter and topped with our traditional cured meat. Just add our homemade pickles and your tastebuds will be instantly be transported to France… you will just need to grab a bottle of wine.
Our custom mix of flour is unique and will bring your bread experience to the next level. We buy flour from local farmers/millers and mill it here on site. Rye, soft wheat, heritage grains, spelt, einkorn and more. It is important to add that the ancient stone ground milling process we perform gives us a flour mix containing the whole grain including the germ and some good fiber – nutritious fiber that is removed from the flour during a modern industrial metal cylinder milling process.
All our bread is made with sourdough only. No yeast is used even though our yeast free process brings a more complicated and sometimes less predictable behavior from the dough.
